Caramelized Onion & Goat Cheese Pizza with Sweet Potato Socca CrustPrep time: 30 min; Cook time: 30 minIngredients:CRUST: 2 medium sweet potatoes 1 c chickpea flour 1 c water SAUCE: She uses THIS RECIPE with no sesame oil, only 1 tsp soy sauce and lemon juice instead of lime juice TOPPINGS: 1 medium onion, thinly sliced 1 medium sweet potato, diced 1 c sliced bell peppers (any color) 2 oz goat cheese (crumbled or sliced) balsamic vinegar Instructions:CRUST: 1) Poke the sweet potatoes all over with a knife or fork and microwave for 6 minutes. 2) Let cool slightly and scoop the insides into a bowl. 3) Add the chickpea flour and water and stir well. 4) Pour into a well-greased 9-inch springform pan and spread evenly around the pan. 5) Bake at 425 degrees for 35 minutes. SAUCE: Follow the directions in the linked recipe TOPPINGS: 1) Diced the sweet potatoes, drizzle with oil and roast in the oven along with the crust. 2) Saute the onions and peppers in a saucepan over medium heat with a little oil until caramelized. 3) Add a splash of balsamic vinegar if desired. ASSEMBLY: 1) Remove the crust from the pan (it will probably stick a little bit). 2) Top with sauce. 3) Add the onions, peppers and sweet potatoes. 4) Top with goat cheese. 5) Return to the oven for 7-8 minutes or until heated through. 6) Slice and serve drizzled with balsamic vinegar
