Great recipe share from Ellen! Thanks girl! (Original site link to recipe posted at bottom.) Heart of Palm Salad with Tomato, Avocado, and Lime (with or without Cilantro)
(Makes about 4 servings; recipe created by Kalyn by combining two beloved heart of palm salads.) Ingredients:
1 can (15 oz.) hearts of palm (or half of a 25 oz. jar), drained and cut into slices 2 small avocados, diced 2 T + 1 T fresh squeezed lime juice (I use my fresh-frozen lime juice for recipes like this.) 1 cup small grape tomatoes, cut in half 1/4 cup thinly sliced green onion (or more if not using cilantro) 1/2 cup chopped cilantro (optional) sea salt to taste Instructions:
Put palm hearts into a colander placed in the sink and let them drain while you prep other ingredients. Dice avocados, put them in a bowl large enough to hold all the salad ingredients, and toss with 2 T of fresh lime juice. Slice the hearts of palm and separate into rings (or cut in half if they don't separate easily.) Cut the grape tomatoes into half. Slice the green onions and chop the cilantro (if using.) Toss the hearts of palm, tomatoes, and green onions with the avocado/lime juice mixture, then add more lime juice to taste. (I added another tablespoon of lime juice.)
