The latest research concludes that wood cutting boards are actually safer than plastic cutting boards with regard to the harboring of bacteria. Deep knife cuts in plastic boards are nearly impossible to sterilize, even in the dishwasher. When washed properly with warm soapy water and allowed the dry, wood cutting boards' natural properties actually help to kill bacteria on their own.
