I've made this recipe countless times and it's always amazing, especially in the warm months. What the heck is ceviche, you ask? It's a South American dish made with seafood, lime juice, avocados, cilantro, and tomatoes. It's served cold, and the seafood is "cooked" by the lime juice while it marinates for four + hours.
