Hey fellow veggie lovers!
One of my favorite veggie dishes is roasted brussel sprouts and bacon! Even that can get boring sometimes, so you can always mix it up with some root veggies too. These recipes really only work with fresh veggies; no frozen or canned, please.
1 bag fresh brussel sprouts (ca 1 lb) 2 fresh garlic cloves 2 slices thick cut bacon (no nitrates or nitrites, please!) Sea salt and pepper to taste
Preheat oven to 400F. Grab a mesh bag of fresh brussel sprouts. Trim any brown stem bits and cut each one in half length-wise. If they are super huge, you can cut them in quarters, but this shouldn't be necessary. Put them in a large baking dish. Dice the garlic cloves and sprinkle them over the brussel sprouts. Dice the raw bacon and sprinkle it over the brussel sprouts evenly. Sprinkle sea salt and pepper to taste, and put in oven. Note that the bacon should provide ample cooking fat for the veggies, but if not, add a drizzle of high quality high temp oil, such as grapeseed oil. Roast for 35 to 40 minutes, until crisp on the outside and tender on the inside. Stir if necessary.
Variation Essentially the same recipe as above, but you can add other rough chopped root veggies, such as beets, carrots, parsnips, onion, and sweet potatoes. Mix it up!

This sounds delicious! (And I love how we will totally ignore that bacon is not a vegetable and carry on because bacon is awesome.)
