It's sweet and filling. Even my fiancee likes it (he previously thought he didn't like squash).
Preheat oven to 375 Cut the squash in half, and remove the seeds Add 1" of water in a deep baking dish Place squash cut side down in the water Bake at 375 for 30 minutes
Reduce heat to 350, drain the water, and put the squash back in the oven cute side up to bake for another 15-20 minutes (until fork tender)
Scrape the flesh out with a spoon and add any spices you'd like. A little grass fed butter, some sea salt, and some maple syrup are my favorites.
*Note: some recipes have you baking the squash cut side up with the seasonings already in the squash. This can work, but it rarely comes out as tender as with the above method.
