I'm usually pretty strapped for time with juggling everything for graduate school, so I'm always on the lookout for quick and simple meals. This is simply just 2 cups frozen zucchini and 1 cup of frozen bell peppers (pre-sliced is a timesaver, just be on the lookout that there aren't any preservatives or added sodium). I put everything in a pot, add water until everything is submerged and boil it for 4-6 minutes. Once it's finished boiling, I transfer it to a skillet to brown the veggies. I'm a stickler for texture, so adding them to the skillet for a few minutes helps to keep them from turning soggy. You can add a little bit of organic italian dressing for taste, but the peppers really help to bring out the natural flavors so you may opt to not add anything to them. Cheers! Attachments:

Ooooo!! Looks yummy Brandon!! Thanks for sharing. I LOVE zucchini and bell peppers!! Another way you could do the veggies - I'd highly suggest one of those cool-looking flower petal metal steamer thingys. Just put an inch or so of water at the bottom of your pot, steamer thingy in, veggies in, cover and low boil until desired texture. Alternatively, I don't know if you're a microwave user or not - but if you add the frozen veg to a bowl (preferably non-plastic), add a table spoon of water, cover it (with a plate or lid) and cook for about 4 minutes (depending on how many you're making) the veggies usually come out quite crisp! Both ways are quick and might eliminate the skillet step for you b/c I know how valuable time is to students (or bachelors ...or single moms...or, um anyone really I guess!). Also, in writing this post, I was doing some research on cooking methods and how they might affect the nutrient content of foods. Seems like there are benefits (and downsides) to any method! So whatever works for you is the method I'd recommend.
